Strawberry Shortcake

 

  • ½ cup sugar
  • 6 TBLS softened butter
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • ½ milk

Preheat oven to 350°.  Lightly grease square pan.  In medium bowl, cream together the sugar and butter with electric mixer until smooth.  Add egg and vanilla, and mix well.  In small bowl, combine all the dry ingredients with a whisk.  Add 1/3 cup of dry to egg mixture, and mix.  Pour in half the milk and mix again.  Repeat until everything is just combined.  Spread batter in prepared pan and bake for 20 minutes—don’t overbake, but make sure it is cook through.  Cool, then cut into squares, and slice each horizontally, putting strawberries in between layers and on top.  Top it all with some sweetened whipped cream.

 

Strawberries:  Slice and combine with sugar and vanilla.  Allow to sit at least 30 minutes or up to several hours.
