Apple Pecan Salad

½ pkg spinach

1 head red leaf lettuce, torn up

½ cup craisins

1 apple chopped

Feta cheese, if desired

½ cup pecans

2 TBLS sugar

Honey Vinaigrette Dressing

Combine sugar and pecans in fry pan. Cook and stir for several minutes until sugar carmelizes. Remove from heat and put on a plastic plate or paper towel to cool. Combine the spinach and lettuce. Top with craisins, chopped apple (can sprinkle apples with OJ if desired), and feta cheese. When cooled, add candied nuts. Just before serving, add honey vinaigrette and toss.
