Rigatoni and Cheese

1 lb ground beef

1 cup chopped onion

2 cloves garlic, minced

32 oz. jar spaghetti sauce

1/4 tsp pepper

Pepperoni slices—cut into quarters if desired

32 oz cottage cheese (I use less)

1 cup milk

1 tsp salt

16 oz box Rigatoni, cooked until tender and drained)

4 TBLS Parmesan cheese

2 eggs, beaten

In large skillet brown beef, then add onion and garlic. Stir in sauce pepper and pepperoni. Simmer 10 minutes. In another bowl combine cottage cheese, milk, egg and salt. Add rigatoni, and toss to coat. At this point, use a 9X13 casserole dish to feed a lot of people, or put into two dishes and freeze one, or give one away. Bake in 350 degree oven for 20 minutes, or until bubbly.
