Sour Cream Chicken Enchiladas

 

2 TBLS oil

1 cup chopped onion

3 cups cooked, shredded chicken

½ tsp salt

1 1/2 cups shredded cheese

12 corn or flour tortillas

Sauté onions, add chicken and salt and heat. Turn off heat and add cheese. Fill tortillas with chicken mixture and put in baking dish.

Sauce:

¼ cup butter

¼ cup flour

2 cups broth or water

½ tsp salt

1 tsp chili powder

¼ tsp pepper

2 cups sour cream

1 can green chilies

Melt butter, then add flour until thick. Add broth or water, salt, chili powder and pepper. Remove from heat, add in the sour cream and chilies. Pour on top of enchiladas and top with additional cheese. Bake at 350 for 30 minutes.
